You just need to change the "Sort By" settings in the catalog Settings, and give the "Custom" sort a name (label).

Detailed Explanation:

• Go to SETTINGS > Catalog Settings and look for the settings that begin with  "Sort By"
• Change the default sort to "Custom"
• In the field below that, enter in a name such as "Default"
  

When you look at your website, you will notice that the default drop-down menu shows that "Default" that you entered.  Maybe you prefer to use a different word like "Relevance"
