Short Answer:

In essence, the 'Sort By' drop-down is a tool to help shoppers find what they want.  By default, it is enabled on your store.  Of course, like most tools, it does not apply to every type of business or products.  The 'Sort By' feature will eventually expand to have more options than it currently offers.

Like most other catalog merchandising settings, it can be disabled from within your "catalog settings."

Detailed Explanation:

To remove this feature on your online store, go to:

SETTINGS > Catalog Settings

And then look for the setting " Sort By - Hide"

Change it to "Yes"
