Inventory can be a complex thing.  The first point to remember is, if  you do not need to use inventory, then don’t.  In other words, if  you do not need to automatically limit or prevent ordering on your site, when  products run out, then do not use the inventory system—it will only addmore work for you, as well as unnecessary complexity.

Detailed Explanation:

Even without using the inventory system, you can manually limit ordering.  In  your catalog settings, you will find that you can setup basic rules such as  whether shoppers can order when an item runs out of stock.  On the Items  list, you will see that you can easily update the individual product statuses  (out-of-order, backordered, active, inactive, etc…).
